I’ve relocated most of the amaranth volunteers to one area of the garden, but there are still a couple in the tomato area.
Purslane grows wild around here but I also planted a bunch of seeds last year and now there are tons of volunteers. It is an edible green (tastes lemony), has a shallow root system and provides good ground cover to block out weeds.
I planted parsnips in that area 3 years ago and this plant keeps popping up. I actually think it is lovage not parsnips. They are very similar plants. The leaves are very fragrant, earthy and sweet. The roots (that I have dug up in the past) did look like parsnips but had a softer texture (not hard and crunchy like a carrot). Parsnips and lovage can be used in the exact same way so it doesn’t really matter what it is officially hahah!

Love the garden. Mine r very small now, but they r bigger than they have been for 10 yrs. My bigger one is 10’x10′. In the future I will have more gardens like yours. Just beautiful!!
